Grana Padano was first created by the Cistercian order over 1000 years ago. They had so many cows on their land they didn't know what to do with them, so they used ripened cheese as a way of preserving surplus milk. The cheese they created, Grana Padano, is parmesan's sweet little sister. She looks a lot like parmesan, she even has the same grainy texture, but she's milder and more subtle. The monks knew what they were doing. It's just a pity cheese graters weren't around back then.
