#ZizziRecipes – Chocolate and Banana Calzone

For anyone out there looking to channel their inner Zizzi chef why not try your hand at making our delicious Chocolate and Banana Calzone at home…sweet, warm dough filled with banana, chocolate sauce & mascarpone cream, with vanilla gelato & salted caramel sauce, mmmm!

30g flour
0.5g yeast
19ml water
175g light soft brown sugar
300ml double cream
50g butter
½ tsp salt
15g dark chocolate
½ banana
Demerara sugar
1tbsp mascarpone
1tbsp chocolate sauce
Vanilla gelato
Icing sugar

For the dough:
Add 30g flour, 0.5g yeast and a pinch of salt to a large mixing bowl
Pour in 19ml water
Mix ingredients together with your hands until you can roll into a ball
Rest the dough till it doubles in size

For the salted caramel sauce:
Add 175g light soft brown sugar into a pan
Add 300ml double cream and 50g butter
Add ½ tsp salt and cook the mixture over a low heat
Mix together well
Turn up the heat 2-3 minutes
Leave to cool

For the chocolate sauce:
Add 15g dark chocolate into a heatproof bowl
Place the bowl over a pan of barely simmering water
Allow the chocolate to melt, stirring occasionally

Making the calzone:
Spread semolina over your work surface
Place your dough in the centre and stretch out into a circular shape using your hands
Add ½ banana to one side of the dough leaving an inch around the edge
Sprinkle demerara sugar
Add 1tbsp mascarpone evenly over the top
Drizzle 1tbsp of chocolate sauce
Fold over and seal by pinching the edges
Drizzle oil over the top
Place in the oven for 10-12 minutes at the highest temperature
Turn halfway through
Cook until golden brown
Add vanilla gelato
Drizzle salted caramel sauce
Dust with icing sugar

Plate up and enjoy!
