#ZizziRecipes – Arancini

For anyone out there looking to channel their Zizzi chef why not try your hand at making our delicious Arancini balls at home…hand-rolled risotto balls with mozzarella, peas & a breadcrumb coating, yum!

10g onions
60g rice
85g vegetable stock
1tbsp pepperonata sauce
30g peas
30g mozzarella

For the risotto:
Add 10g diced white onions into a hot pan
Add 60g risotto rice
85g vegetable stock
Stir constantly for 10 minute
Take off heat
Cool for a couple of hours
Now turn into Arancini:

Making the Arancini:
Add 1tbspn pepperonata sauce (traditional Italian stew of onions and sweet peppers)
Season with salt & pepper
Add 30g peas
Add 30g mozzarella
Mix all the ingredients together
Take a portion or the mixture and roll into a ball
Cover in breadcrumbs so the mixture is fully coated
Repeat steps 7 & 8 until all the mixture is used
Heat a pan with oil
Very carefully fry the balls in hot oil for 4 minutes until golden brown on the outside and gooey in the middle
Remove the Arancini balls using a slotted spoon
Plate up with a sauce of your choice and serve!
