Calzone Pollo Spinaci

INGREDIENTS

Ingredients for Chicken & Spinach Calzone (Serves 1–2):

  • 200g pizza dough ball
  • 110g mozzarella, broken into small chunks
  • 1 small chicken breast, cooked and torn into chunks
  • 2 slices prosciutto
  • 50g fresh spinach
  • 5 button mushrooms, sliced
  • 60g béchamel sauce
  • Pinch of rosemary, chopped
  • 1 tsp Riserva cheese, grated
  • Vegan garlic butter, for brushing
  • Red pepper tapenade, for dipping

METHOD

How to Make a Calzone Pollo Spinaci:

  1. Preheat the oven
    1. Preheat your oven to its highest setting. If using a pizza oven, heat to 300°C (570°F).
  2. Roll out the dough
    1. On a floured surface, roll the dough into a large oval (around 30cm wide). Keep it thin so it crisps up beautifully in the oven. Transfer to a baking tray or pizza paddle.
  3. Add the filling
    1. Sprinkle the mozzarella across the centre, then add the chicken pieces and layer over the prosciutto. Top with spinach, mushrooms, and chopped rosemary.
  4. Add the béchamel sauce
    1. Spoon the béchamel evenly over the filling to create that signature creamy calzone texture.
  5. Fold and seal the calzone
    1. Fold the dough over the filling to form a crescent shape. Press firmly to remove air pockets, then crimp and seal the edges היט ensure no filling escapes during cooking.
  6. Bake until golden
    1. Carefully place the calzone in the oven and bake until puffed up and golden brown. The steam inside will help create its signature rise.
  7. Finish with flavour
    1. Remove from the oven towards the end of cooking, brush with vegan garlic butter, and sprinkle over the grated Riserva cheese. Return to the oven for a few more minutes until bubbling and golden.
  8. Serve and enjoy
    1. Serve with red pepper tapenade on the side for dipping and enjoy your homemade chicken calzone.
