RECIPEKING PRAWN SPIEDINI RECIPE

INGREDIENTS
Ingredients for King Prawn Spiedini (Serves 1–2):
- 5 raw king prawns, peeled and deveined
- 3 tbsp rose harissa paste
- 100ml seafood sauce (store-bought or homemade with chopped tomatoes, fish stock, and roquito chillies)
- 10 sun-blush tomatoes
- 1 tbsp garlic spread
- ½ lemon
- Fresh parsley, for garnish
- 1 metal or bamboo skewer
METHOD
How to Make King Prawn Spiedini:
- Preheat the oven
- Preheat your oven to 220°C (430°F).
- Prepare the skewers
- Carefully thread the lemon onto the metal or bamboo skewer, followed by the king prawns. This helps infuse the prawns with a subtle citrus flavour as they cook.
- Marinate the prawns
- Using a spoon or brush, coat the prawns evenly with the rose harissa paste, ensuring they are fully covered for maximum flavour.
- Cook the prawns
- Place the skewer on a baking tray and cook in the oven for 10–15 minutes, until the prawns are fully cooked (they should turn pink and opaque throughout).
- Prepare the sauce
- While the prawns are cooking, heat the seafood sauce in a frying pan with the sun-blush tomatoes and garlic spread until hot and bubbling. Pour into a serving bowl.
- Assemble and serve
- Once cooked, carefully place the prawn skewer over the bowl so it sits above the sauce. Garnish with fresh parsley for a pop of colour and freshness.
